Coconut Snowballs


You don't have to wait until winter to enjoy these treats! Besides being delicious, coconuts are an excellent source of fiber they also provide a ton of vitamins & minerals.

Recipe for Coconut Snowballs

Ingredients

  • 2 cups of shredded coconut

  • 3.5 tablespoons of refined coconut oil, melted

  • 2 tablespoons of maple syrup

  • 1 vanilla bean or 3 teaspoons of vanilla extract

  • 3/4 of dark chocolate chips & 1 tablespoon of refined coconut oil melted

Instructions

  • In a food processor add 1.5 cups of shredded coconut, coconut oil, maple syrup & vanilla bean/extract, process on high speed until you see that the mixture is mixed & has stuck together. Remove from food processor and pour/scoop into a mixing bowl, with your hands mix a little more and then begin to roll into small 1.5 inch balls (don't worry if they are not perfectly round, you can roll them one last time before placing them into chocolate). You will need to press firmly on mixture to hold together, place balls on a tray and place in refrigerator for 45-60 minutes (do not place in freezer as I did, not a good idea).

  • Place chocolate chips in a pan on medium heat and stir constantly, as chips begin to melt add coconut oil and continue to stir.

  • Remove pan from heat and drop 1 ball into chocolate, remove with fork and place on a cookie cooling rack, repeat until all balls are done.

  • Take remainder of shredded coconut (1/2 cup) and sprinkle over the balls, the balls do not have to be totally covered it's a matter of preference.

  • Keep in fridge for storage and remove 5 minutes prior to serving
