Cuckoo for Coconuts


Are coconuts considered a super food? Judging by the fact that you can drink coconut water, coconut milk, make coconut butter, coconut oil and eat the inside "meat" all from 1 coconut, I would say that's extraordinary. Coconuts are rich in vitamin C which helps to maintain collagen & also helps to stimulate the immune function and help to fight against viral & bacterial infections. You can also find your B vitamins in coconuts from B1 to B3 & B6 just to name a few. Coconuts are also a good source of magnesium, magnesium helps with digestion by relieving constipation, also helps to treat insomnia and can relieve muscle aches and spasms.

The list just goes on and on regarding all the benefits that coconuts provide us, so don't worry you won't have to go to the Caribbean to get these benefits just visit your local grocery store. I'm sure you will find some type of coconut product; coconut water, coconut milk, coconut pieces and let's not forget about the shredded coconuts for baking, I'm sure you might even find some coconuts rolling around in the produce department.

Recipe for Raspberry Coconut Smoothie Bowl

1/2 cup to 1 cup of frozen raspberries

1 large frozen banana

1/2 cup to 3/4 of a cup of almond-coconut milk

1 teaspoon of coconut oil

One 2-inch piece of vanilla bean, or 1 teaspoon of vanilla extract (but the taste will not compare when using the vanilla bean)

Blend all of the above ingredients in a blender until smooth or desired consistency, if you find that it is too thick then add a bit more almond-coconut milk

Pour into a bowl or coconut and top with desired toppings: chia seeds, granola, fresh berries and shredded coconut
