Childhood memories start flooding back when I think of Sloppy Joes! It was a once in a while treat, more like my mom was in a rush to get dinner cooking and would throw whatever vegetables she could find in the fridge along with the package of ground beef into a skillet and voila! Perhaps not the healthiest of meals, but what if you put a spin on it? I accepted the challenge as a holistic nutritionist to make it healthier (no sauce from a can) and to eliminate the meat for Meatless Monday. For those of you who planted a garden this summer feel free to add vegetables, as many as you want and any kind that you think you would enjoy. Use my recipe only as a guideline, don't let it hinder your inner Gordon Ramsay.
Recipe
I always try to use organic products, when I am not able to (based on availability) I then try to make sure the product is at least non-GMO (I try to avoid conventional as much as possible).
1 package of Beyond Meat-Beyond Beef (this is a plant-based ground meat, non-GMO, gluten free and soy free)
1 whole small onion
1 small green/red/orange/yellow bell pepper (your choice of 1, or add all 3)
2 small whole carrots
3 kale leaves
1 jalapeno optional (90% of the seeds removed)(I love spice)
2 tablespoons of olive oil
1/2 cup of organic ketchup
2 tablespoons of tomato paste
1/2 teaspoon of garlic powder or 2 cloves of garlic minced
1 teaspoon of prepared yellow mustard
2 teaspoons of brown sugar; however, I try to avoid refined sugar I prefer using maple syrup or honey as a substitute.
Salt and pepper to taste
Directions
Take all of the vegetables listed above and throw them into the food processor and chop them up, put to the side.
In a medium non-stick skillet over medium heat, add the olive oil heat it up for 20 seconds, add in the vegetables from the food processor, fry them up stirring constantly for 2 minutes.
Add the Beyond Meat, continue to stir and brown the Beyond Meat, stir in the garlic powder or minced garlic and mix.
Add in the ketchup, mustard, brown sugar and mix thoroughly.
Reduce the heat, simmer for 25-30 minutes. Season with salt and pepper.
Serve on a hearty bun, top it with plant-based cheese and don't forget the pickle!
